24-hour resto-café Eggspectation, present in all properties of Jaypee Hotels in Delhi and NCR, has revamped its menu, giving it an all-new colour and look that match with the restaurant design and colour. Interesting pictures in the menu support the recipes and are very informative too.The new menu has expanded to around 128 dishes, to which Enzo Renda, co-Chairman of the Board and CEO, comments, “No other restaurant in Delhi has such an extensive menu.” In an exclusive with Food Service India, he informs, “We have tried to make our dishes more health-friendly, and have changed around 40 percent of the menu by introducing dishes that are more wholesome. It is important for a menu to keep keep evolving and not stagnate, so one needs to ensure that it is not becoming obsolete and that it stays trendy.”
As regards the research that went into the new menu planning, he said, “I first analysed the latest trends across the world and then observed what is happening in the Indian market, and then checked what competitors were doing. During my travels across the globe, I see what can be adapted by Indians. Since I come from Montreal, our new menu has influences from French, American and Californian cuisines. We made various alterations, including cover and tax changes. We tried and tested the new menu last year in October in North America and then we made the desired changes for the Indian audience. We did not customise the dishes but we did a fusion to make it suitable for the Indian market.”
There are 8 Eggspectation restaurants in Ontario and Quebec, 5 in the US, and 3 in India.
